Sous Chef

Born and raised in the Philippines, Pierce's culinary journey began out of necessity, as no one in his family cooked so he learned from a close neighbor and cookbooks. He furthered his skills by pursuing a culinary management course at CCA Manila, followed by a one-year internship at Loring Place in 2017. After gaining experience at Hapag MNL, a fine dining Filipino restaurant, he returned to Loring Place in 2022 as a full-time line cook then later being promoted to a sous chef, marking a significant milestone in his career.
